Ingredients

  • 1 cup plain nonfat Greek yogurt
  • 1 cup low-fat cottage cheese
  • 1 small box sugar-free cheesecake or vanilla pudding mix
  • 1 cup light whipped topping
  • ½ cup unsweetened almond milk or Fairlife milk
  • 1 tsp vanilla extract
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 2 tbsp crushed graham crackers or low-carb cookie crumbs (optional topping)
  • Sweetener to taste if needed (stevia or monk fruit)

Instructions

  1. In a blender or food processor, blend the cottage cheese until smooth.
  2. In a large bowl, combine Greek yogurt, blended cottage cheese, pudding mix, milk, and vanilla extract.
  3. Fold in the whipped topping until fluffy and creamy.
  4. Gently stir in the mixed berries.
  5. Spoon into dessert cups or small jars.
  6. Chill for 1 hour before serving.
  7. Top with extra berries and crushed low-carb crumbs if desired.
