Ingredients
- 1 cup plain nonfat Greek yogurt
- 1 cup low-fat cottage cheese
- 1 small box sugar-free cheesecake or vanilla pudding mix
- 1 cup light whipped topping
- ½ cup unsweetened almond milk or Fairlife milk
- 1 tsp vanilla extract
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 2 tbsp crushed graham crackers or low-carb cookie crumbs (optional topping)
- Sweetener to taste if needed (stevia or monk fruit)
Instructions
- In a blender or food processor, blend the cottage cheese until smooth.
- In a large bowl, combine Greek yogurt, blended cottage cheese, pudding mix, milk, and vanilla extract.
- Fold in the whipped topping until fluffy and creamy.
- Gently stir in the mixed berries.
- Spoon into dessert cups or small jars.
- Chill for 1 hour before serving.
- Top with extra berries and crushed low-carb crumbs if desired.
